“Saturated with black volcanic tannins, this wine’s intensity hides the forest-green notes and blackcap raspberry flavors until it begins to open with a day of air. There’s a sunniness to the fruit, as if its releasing some of the chlorophyll stored up during the season, an undercurrent of green chile spice that would snuggle up with Korean bolgogi, especially with short ribs.”
